Depends what I'm doing. 10% to 25% for me, usually 15% for burgers, 25% for sausage. If you add 10 lbs of fat to 100 lbs of meat the fat percentage is 9%.

My family really enjoys elk meat though, gamey or not. Most things cooked with wild game around here also involve a lot of seasoning. Things like tacos, sloppy joes, stews, chili, etc.

Plot runners total would be accurate for a big bull, but not a cow. You'll get 125-200 lbs of meat off a cow depending on her size.

Jul 1, 2021 · Colorado is actually specific about this but Utah is not, so IANAL but I imagine the "reasonable person" defense would come into play. If a reasonable person would conclude you didn't waste the meat, you're good. For me I think Colorado's rules are pretty reasonable: four quarters, two backstraps, two tenderloins.

Oct 30, 2012 · Elk are grazers they will age like beef, deer are browsers and do not age like beef.Elk should be hung in a cooler 35-37 degrees for the tissues to break down.They should be clean,dry, and have at least 1 to 2 feet of space around them.In my opinion you are hurting your deer to hang it for more than 2 days.

Jul 10, 2023 · Elk meat can be really hard to come by, make the most of it. Butchering it is a lot easier with the bone in. Think about all the cuts. Going into the freezer to look for a flank steak, or a round roast, etc. bone in leaves you the option to bring it to a butcher to process if you want to go that route. (I don't think they'll take it bone out)
